I called today to see if they could do my treatment a little early and SURPRISE: I wasn't supposed to start the diet until June 28th...OOPS!!!
On the upside...I have lost 8lbs so I am not stopping now!! I am going to stay on the diet until after my treatment and not cheat!! Who doesn't love losing weight???
Breakfast: scrambled egg whites
Lunch: Apples/peanut butter
popcorn
I really wasn't hungry for lunch
But supper was AMAZING!!
Dinner: White beans w/ non-iodized salt (slow cooked all day)
Boiled cabbage with unsalted butter and pork chops
YUMMY!!!

LID Diet Day 5
Busy diet and exhausted momma...totally forgot to tell about my diet
Breakfast: Grits with unsalted butter and sugar
Lunch: Plain ol' chicken breast w/ salt free Mrs. Dash
apples with natural peanut butter
Dinner: STEAK!!!! and a big ol' baked potato (no skin)

Just some thoughts I wanted to get out...
I have been feeling a little dehydrated so I upped my water intake. I
am so tired of apple juice and soda just doesn't float my boat. I
bought some Fruit2O today and it tasted like grape koolaid...yum
My family is getting better about not eating yummy food around me. They take their plate in another room and it's helping a lot.
I think I am going to try to make my own mayo so I can have something other than ketchup to eat....
Mrs. Dash is WONDERFUL!!! I am going to keep it in my kitchen even after LID. See...this diet isn't all bad
Found some dark chocolate that I could eat!! YAY!! Totally not a fan of dark chocolate but HEY...it's better than no chocolate and it's packed full of antioxidants.

LID Diet Day 4 w/ a little cake craving
Today was "L"'s birthday party and man I wanted some cake sooooo bad!!! I am freezing some to enjoy after my LID is over though :-)
No breakfast....I was tired and pretty much slept right through it...
Lunch: Plain grilled chicken breast and a banana....wasn't very hungry
Dinner: I was in a hurry and starving so I threw some ground turkey in a skillet...cooked it and poured salt free ketchup on top....then added some salt free green peas and DINNER WAS SERVED...and eaten quickly.....

LID Diet: DAY 3
Today has been CRAZY!! I celebrated "L"s birthday and now I am settling in for bed.....
No breakfast this morning....just a big ol' glass of sweet tea
Lunch: Wheat crackerbread (salt free of course) with apples and salt free peanut butter
Also had some yummy salt free popcorn with non-iodized (OK FOR DIET) salt :-)
Dinner: My amazing neighbor grilled me some burgers with my salt and I ate them plain with salt free ketchup
Oh and they fixed me some salt free yummy mixed veggies too!!
Topped off with sweet tea

So I had an OOPS but I caught it....
I was making "L" some shells and cheese and I got some cheese on my finger. Out of normalcy in my house, I licked my finger OOOPS!!!
I hurried to the trash can and spit it out and wiped off my tongue...

LID Diet DAY 2
So today was a little easier.....I am still not used to being around "unhealthy, carb filled, fattening" foods yet but I am slowly learning what I can and cannot eat. I have frozen the rest of my goulash and will pop them in the microwave when I feel a craving for it.
Breakfast: Coffee with marshmallow cream and a little hazelnut syrup
Lunch: Goulash (all salt free:see day 1)
Baked potato with unsalted butter and salt substitute (no skin)
Snacks: Unsalted popcorn and an apple with all natural no salt peanut butter (YUM)
Dinner: beef steak fried in a smidge of corn oil dipped in SALT FREE ketchup
mashed up baked potato with unsalted butter
I am not considering this diet something bad....it's a journey to actually eating healthy foods and getting better for myself and my children...oh and knocking a little weight off the birthing hips :-)

Cake free weekend: My big boy is turning 3!!!
So L will be three tomorrow!!! I am bummed I cannot have cake but I will be freezing some to enjoy after my RAI treatment.

Oh I am so HAPPY HAPPY HAPPY!!!
I found all natural unsalted/salt free potato chips, crackers, pop corn and peanut butter....now if I could find a chocolate that I could eat I would be "A-OK"
Diet: Day 1
You don't starve on this diet......I am going to be posting each day about what I eat.....maybe it will spark some ideas for the other people who go through this
Breakfast: Coffee w/ coconut milk and hazelnut syrup
Lunch: Salt free goulash
Salt free diced tomatoes
Salt free tomato sauce
Elbow macaroni
Ground turkey
Bell peppers and onions softened in a smidge of olive oil
YUM!!!
Dinner: Probably goulash again or a baked sweet potato with unsalted butter, cinnamon, and sugar
What to drink?? Sweet tea and flavored water
EDIT- DINNER= Grits w/ unsalted butter and sugar....and some koolaid (the NO red dye kind)

Most of you know me already.....some of you may not
My name is Emily and I am from Western Kentucky....I am 26 years old with two kids... "H" is 7 and she is my wild child and "L" is my soft hearted but stubborn 2 year old boy.
In February, I found out I had thyroid cancer and went through 2 surgeries, one on March 8th and the other on April 12th, to remove my thyroid. Now....still not cancer free yet....I have to start a No Salt/No Iodine diet to prepare for an I-131 Radioactive Iodine Treatment.
The reason for this blog?? This is my out....maybe my thoughts or what I go through can help someone else. I know it helps me to sit and blog about the daily life of kids, work, school, cancer, etc.....
